The joy of bringing a meal to the table made from fresh produce from our school garden is something that makes FGPS students happy and proud. This week’s hero is delicious eggplant! Perfectly sliced, lightly crumbed and pan fried, then carefully topped with a fresh tomato sauce flavoured with fresh basil. Layered with strips of mozzarella and baked to infuse all the wonderful flavours together. Eggplant Parmigiana! Making this dish is a labour of love, but worth it, to give our students a taste of a classic Italian staple.
